Edward Mair has been appointed Executive Chef at Hilton Dubai Palm Jumeirah, taking on the new role in September 2026.
Mair brings more than two decades of culinary and hospitality experience across the United Kingdom, the United Arab Emirates, China, and Saudi Arabia, with a career spanning luxury hotels and international hospitality groups.
Prior to joining Hilton Dubai Palm Jumeirah, Mair served as Executive Chef at Sofitel Dubai Downtown from July 2025 to September 2026.
He previously spent nearly two years with Hilton, serving as Cluster Executive Chef at Waldorf Astoria Qasr Al Sharq and Jeddah Hilton from July 2024 to June 2025, following his role as Executive Chef at a Hilton property in Ras Al Khaimah from October 2022 to June 2024.
Earlier in his career, Mair held senior culinary positions with Fairmont Hotels & Resorts, including Executive Chef in charge of Food and Beverage at Fairmont Chengdu and Executive Chef at Fairmont in Nanjing. He also served as Executive Chef at Four Seasons Hotels and Resorts in Shanghai.
His earlier experience includes roles with Starwood Hotels & Resorts Worldwide in China and the UAE, Jumeirah Group in the UAE, and more than a decade with Starwood in the United Kingdom. He began his career in culinary operations before progressing through sous chef, executive sous chef, chef de cuisine, and executive chef positions.
In his new role at Hilton Dubai Palm Jumeirah, Mair will lead the property’s culinary operations, bringing his extensive international experience across luxury hospitality and food and beverage management to the Dubai property.
